 After confirming that my equipment was out of warranty (more than a year), customer service informed me that the company does not accept devices for repairs or replacement parts "due to Covid." In addition, because they do not send out internal parts to consumers, they will not send you new discs to replace them yourself.   No, as others have mentioned, there are several models of the ChefChoice Electric Knife Sharpener. However, because my blades are not of historic grade and the majority of professional knives on the market now have 15 degree edges, I used this sharpener to sharpen all of my knives to a 15 degree edge. Excellent outcomes!
I only have one Heckels knife and none from Shun. I do own a few Victorinox blades, including an 8" chef's knife with a 15° Asian edge grind rather than a 20° European/American edge. This sharpener's major wheels feature two distinct angles: 20° and 15°. The final honing wheel is designed to provide an extremely sharp edge to any edge angle. Unlike previous models, the honing wheel in use now is constructed of ceramic. On a Chef's Choice, I previously used a diamond honing wheel. The edge was decent, but not as sharp as what the ceramic wheel on the 1520 could produce. It's almost razor sharp. I give my 1520 five stars because I adore it.  I don't think this is the right instrument for the job. Use a wet stone grinder or something meant to remove metal to finish sharpening the blade, which it does rather nicely.  However, because the blade is so short, the wheel will not begin at the hilt. It's not a big deal. Furthermore, because you are changing the angle of the grind, it will take more than a few passes to accomplish. It will need some time and materials. I thought the end result was worthwhile! I wish you luck and keep you safe!  There are no "three sharpenings," as you claim. I recently realized it's not what I thought it was when I initially got it. For many years, I've had a vintage Chef's choice 2-slot. The older one is "OK," but not exceptional. It has two empty places. Fine and coarse, respectively. I bought it thinking it had three sharpening slots (one for coarse, one for fine, and one for honing) and a button to change the angle from 15 to 20 degrees. Only positions 1 and 3 are reserved for Asians, whereas slots 2 and 3 are reserved for Westerners. Because it just has "Coarse" and "Hone," it is essentially a 2-slot sharpener that isn't even as good as my 10-year-old one. I should have bought a genuine 3-slot for 15-degree knives.
